How Does A Room Thermostat Work?
A room thermostat works by, at first, detecting the air temperature. Then, it turns on the heat whenever the temperature drops below the thermostat settings. When the set temperature is attained, it turns off the heat.

You can programme it to have different temperatures  on different days of the week too. 

A higher setting on a programmable room thermostat will not cause the room to warm faster. The architecture of the heating system, such as the size of the boiler and radiators, determines how quickly space gets heated.
